A new moon is rising in the Colorado coffee world, and it is bringing a taste of the islands. Moonrise Coffee Roasters was a business idea, born in Maui and made in Colorado, that delivers the best air-roasted coffee across the country and right here in Colorado at our two newly opened coffee shops. So, what do landlocked Colorado and the Valley Isle of Maui have in common? Coffee, family, and the Aloha spirit.

Kevin and Sarah Jones, the proprietors of Moonrise Coffee Roasters, spent years in the coffee industry separately then together, after a serendipitous meeting at a coffee shop. During sleepless night duties with their newborn son — baby in one hand and a cup of coffee in the other — Kevin began building the business in his head, running numbers and dreaming big. He decided to start with coffee roasting knowing that a great cup of coffee starts with the best beans. He scoured the globe for the best quality beans and learned everything he could about roasting.

With his heart in Maui, a place he calls his true home and a place where he found connection and community, Kevin found the Maui coffee bean and quickly built the brand around the bean. “Sarah and I were actually in the process of moving to Maui but as life happens so does the unexpected and our relocation was put on hold, as a result, Moonrise found an amazing community here in Colorado!” says Kevin Jones.

In 2022, Moonrise Coffee Roasters was launched, delivering our air-roasted Classic Blends, Hawaiian Blends, and Single Origin coffee beans by mail. “Our formula is simple: we use the best beans, roast them using the best method to bring you the best blends for your morning coffee’” says Jones, “and we roast them right before we send them so that you get the freshest cup of coffee possible!”

After tremendous feedback on the taste and quality of their beans, Kevin and Sarah decided to bring their product to the community in local coffee shops. They opened their first in Greenwood Village Colorado in early 2024 and their second at The Yard on Santa Fe in Denver in April of the same year. “We are excited for our location at the Yard, and working with The Sherman Agency has been great. We love the neighborhood and the connection to the Colorado arts community,” says Sarah Jones. Sarah also shares her excitement for Moonrise at the Yard to host creatives from Colorado and Maui in their gallery, showcasing art and artist meetups starting this summer.

The husband and wife team head up the enterprise splitting their time and talents between the cafes and the roastery but they have their ohana to help. “We have family in every part of the business and we wouldn’t have it any other way,” says Sarah Jones. “But Ohana is so much more to us than that, it’s the relationships we’ve built with the coffee bean farmers to every customer that walks through our doors; the Moonrise ohana is what has made this business so special!” she adds. Moonrise brings a taste of the Aloha spirit to Colorado. “Since our move to Maui was on hold, we knew we wanted Moonrise to be our Maui, from our logo to our beans and our overall vibe, you’ll find a taste of the Aloha spirit here,” Jones says.
